Monday 12/27/21, Still at Erick's in Columbus, GA
Nothing newsworthy to report. We had woken up late and Moreno and I enjoyed the relaxing morning.
He especially was intent on watching out for the squirrels that ran back and forth and up and down a tree across the way. It must have been very frustrating for him to not be able to go out and catch them.
As the day progressed we watched how Erick and Judith spend their time caring for their beautiful girls. They are about 5.5 months old now. Very much individuals and with their own personalities. Amber Sky and Emma Justine. Emma is still smaller than Amber. Emma was only 4.4 pounds at birth. I can't imagine how small that is. But they are both strong and lively. Congratulations to them for doing such a good job. Here are some photos of the new life they lead.
We were down to four for dinner, so to give them a break from cooking or doing stuff Eldon made his signature salmon dish whereby he starts on the stove top, skin down, and puts the citrus jelly on top before sticking it into the broiler for a few minutes. The sad part is that this is an electric oven and the broiler system is different than a gas broiler so the proper degree of caramelization did not happen. BUT the taste was still great.
This was further enhanced by adding a tossed green salad using Erick's freshly harvested greens from his own Letty (that is what he calls his growing tower like Eldon's one at OPH (and a $20% discount) convinced Erick to order). It's looking great and we hope he continues using it. Of course he is (hopefully) going to be stationed in Hawaii this Summer and will need to disassemble this one and start over once they are there in Hawaii. Not a problem. He already checked and the company can ship the little seedling plants to him in Hawaii. Very exciting.So all in all stuff happened this day even though it seemed like it was not much happening. Always a good time, and plenty of eating and drinking, was had by all involved.
